Strawberry Short Cake
Ingredients
- 1 (18.25-ounce) package yellow cake mix, batter prepared according to package directions
- 3 pints fresh strawberries, hulled
- 2 cups (1 pint) heavy cream
- 1 tablespoon confectioners' sugar
- 1 teaspoon vanilla extract
Direction
1.Bake cake batter according to package directions for two 9-inch round layers; let cool. Slice each cake layer in half horizontally, making 4 layers, and place 1 layer on a serving platter. Slice 2 pints of strawberries and set aside.
2.In a large bowl, with an electric beater on high speed, beat the cream, sugar, and vanilla until stiff peaks form. Spread one-fourth of the whipped cream mixture over top of first cake layer. Top with one-third of the sliced strawberries. Repeat with remaining layers, topping final layer with remaining pint of whole strawberries, hulled-side down.
3.Cover loosely and chill for at least 2 hours before serving.Note
You can bake the cake layers ahead of time and freeze them until needed. Just make sure to wrap each layer well.

Twice Baked Potato
Ingredients
- 4 russet potatoes
- 1/2 cup (1 stick) unsalted butter, plus more for greasing
- 1/2 cup milk
- 3 green onions, chopped
- 3/4 cup grated Cheddar
- Salt and freshly ground black pepper
Directions
1.Preheat the oven to 400 degrees F.
2.Bake the potatoes until tender, 1 hour. Let cool enough to handle, and then scoop out the flesh into a medium bowl. Warm the butter and milk together in the microwave until the butter is just melted and the milk is warm. Add half the butter and milk to the potatoes and mash well with a potato masher or fork.
3.Add the green onions and 1/2 cup Cheddar, and blend well with the potato masher, adding more of the remaining milk and butter if too dry. Season with salt and pepper.
4.Reduce the oven to 350 degrees F. Spoon the potatoes into a greased 1 1/2- quart baking dish and bake 15 minutes. Add the remaining 1/4 cup Cheddar on top and bake an additional 15 minutes.
5.Serve.
Beef Tacos
Ingredients
- 1 lb lean ground beef
- 1 yellow onion, minced
- 4 -5 cloves garlic, minced
- 2 teaspoons ground cumin
- 2 teaspoons ground allspice
- 2 teaspoons chili powder
- 1 teaspoon salt
- 1 tablespoon flour or 1 tablespoon masa harina (optional)
- 1/2 cup water
For Tacos & Toppings
- 6 -8 crispy taco shells or 6 -8 flour tortillas, warmed
- chopped tomato, to taste (optional)
- shredded iceberg lettuce, to taste (optional)
- shredded cheddar cheese or colby-monterey jack cheese, to taste (optional)
- sour cream, to taste (optional)
- taco sauce or salsa, to taste (optional)
Instructions
1.Brown beef with onion and garlic, and drain any accumulated fat.
2.Add spices and water, and cook over low heat, stirring occasionally, until mixture thickens (or warms through if not using flour/masa).
3.Serve meat in tacos (warm taco shells in over for 5-7 minutes until they crisp, or warm tortillas briefly in microwave) with toppings of
Three Cheese Mac & Cheese
Ingredients
- 1 teaspoon olive oil
- 1 cup finely chopped oinion
- 2 tablespoons all purpose flour
- 1 garlic clove, minced
- 1.5 cups of 1% low-fat milk
- 1 bay leaf
- 1/2 cup (2 ounces) crumbled Gorgonzola Cheese
- 3/4 cup (3 ounces) grated Parmigiano-Reggiano cheese, divided
- 1/4 teaspoon salt
- 2 cups uncooked elbow marcaroni (about 8 ounces)
- 2/3 cup (2.5 ounces) shredded part-skim Mozzarell cheese
- 2/3 cup panko
- 1/8 teaspoon freshly ground black pepper

- Instructions
- 1.Heat oil in a medium saucepan over medium heat. Add onion to pan; cook 8 minutes or until tender, stirring occasionally. Add flour and garlic; cook 1 minute, stirring constantly. Stir in milk and bay leaf; bring to a boil. Cook 2 minutes or until thick, stirring constantly with a whisk. Add Gorgonzola, 1/2 cup Parmigiano-Reggiano, and salt; stir until cheeses melt. Discard bay leaf.
- 2.Preheat oven to 375°.
- 3.Cook pasta in boiling water 5 minutes or until almost tender, omitting salt and fat; drain well. Add pasta to cheese mixture, stirring well. Place about 1/2 cup pasta mixture into each of 6 (1-cup) ramekins coated with cooking spray. Sprinkle evenly with mozzarella. Top evenly with remaining pasta mixture. Combine remaining 1/4 cup Parmigiano-Reggiano and panko; sprinkle evenly over pasta mixture. Spray lightly with cooking spray; sprinkle with black pepper. Bake at 375° for 25 minutes or until heated.
Turkey Salad
Ingredients
- All of your left over turkey
- Celery Salt
- Curry powder
- A stick of celery
- Pickles
- 1/2 a Lemon
- Mayonnaise
- Mustard
- Table Salt
- Pepper
Instructions
1.Cut up turkey into small diced pieces
2.Add the remaining ingredients according to preferred taste
Note
Only use 3 teaspoons of the curry max! Too much of it will ruin the turkey and the rest of the ingredients.
Blackberry Smoothie
Ingredients
- 16 oz plain vanilla yogurt
- You can also substitute the yogurt for vanilla ice cream
- Your fruit of choice
- Milk
- Sugar (optional)
- I don't like sweet things, but if you feel that your smoothie is still too bitter you can add a couple teaspoons of sugar
1.Add the yogurt, or ice cream, in the blender along with the cut up fruit
2.Mix together and then slowly add milk until you have reached your desired consistency
3.Pour mixture into a fancy cup, add a straw, and voila your fruit smoothie awaits

Spaghetti with Tuna
Recipe for Tuna Sauce only
- Add about 4 table spoons to a preheated skillet
- Saute garlic until nice an golden brown
- After the sautéing the garlic add the onions and saute until nice and soft
- Add 3 table spoons of diced green olive, and 1 table spoons of capers
- Note do NOT eat the capers until cooked!
- Leave garlic, onion, olive, and caper mixture set in olive oil for a few minutes to absorb the flavor
- Be sure to keep the temperature on low so as not to burn any of the ingredients
- After leaving the mixture set, turn up the heat a little and add a whole tomato (diced)
- Cook for about 5 minutes and then and packet of tuna.
- The recipe above says not to fry the tuna, but I found that doing so makes it taste a little less fishy. So if you would like your tuna to taste more like steak you can fry it for a 1 to 2 minutes.
- Add a packet of tuna and mix in with the rest of the ingredients
- Poor the concoction over a plate of spaghetti and you have made yourself an easy home cooked meal!
